Ensuring your honey is at the proper moisture level will prevent issues like fermentation and your honey going bad. It is not uncommon to find capped honey that has too much moisture or even uncapped honey that is at the correct moisture content so judging readiness for harvest by whether the cells are capped or not is not a reliable method. Ensure your harvest is not wasted by checking the moisture content with a refractometer.
